Wine Estate in the heart of Chianti Classico, Castello di San Donato in Perano Estate covers an area of approximately 370 hectares, in a region perfectly suitable for vineyards, between Gaiole and Radda in Chianti, where from time immemorial Sangiovese has reigned supreme over all other grape varieties.

This factor forms the basis of the winery's production philosophy, which is to protect and promote the ampelographic heritage of the Chianti region, without however discounting the importance of international grape varieties, in particular Merlot, which has adapted extraordinarily well to the pedoclimactic environment of the region.

The vineyards are predominantly positioned on south-facing slopes, at an altitude which varies from 400 to 550 meters above sea level.

The soil, mostly of clay composition, is characterized by a skeleton texture, originating from the breakdown of the characteristic limestone rocks of the Chianti region, "alberese" and "galestro", which famously contribute to the intensity and elegance of the aromas and flavours of the wines.

Each vineyard is set up and managed in a highly targeted manner, based on a careful analysis of the pedoclimactic environment, with the objective of producing grapes with distinctive qualitative properties.

Grapes which are grown in our Domini, Montecasi, San Donato, Rubizzi and Tibuca vineyards have different maturation periods and analytical parameters, which means that they therefore require special attention once in the cellars, so as not leave anything to chance.

The vines are trained using the guyot or spurred cordon methods, giving a yield of approximately 1.5 kg of grapes per vine, although during the selection process, the yield per vine can fall to below 1 kg.

The grape harvests, which traditionally occur late in the season and often include several harvesting passes, usually start at the beginning of October and finish, not infrequently, in November, defying the autumn rains.
